Spiced Garlic Beef and Spinach Stuffed Peppers
These stuffed peppers pack a serious protein punch while delivering big, bold Mediterranean flavor. Lean ground beef is seared with plenty of garlic and smoky, fiery harissa paste, then combined with wilted spinach and a touch of tomato for richness. The mixture is piled high into halved bell peppers and baked until the peppers soften and the filling turns deeply savory and slightly caramelized at the edges. Finished with a drizzle of garlicky olive oil and a scatter of fresh herbs, this dish is as satisfying as it is nutrient-dense. Each pepper half delivers a hearty dose of protein from the beef alongside fiber, vitamin C, and iron from the spinach and peppers, making it an ideal high-protein dinner for muscle recovery, satiety, and sustained energy. It's naturally low in refined carbs, keeps well for meal prep, and can easily be scaled up for a crowd.
