Pomegranate Walnut Dark Chocolate Bark
This elegant, no-bake dark chocolate bark is proof that an anti-inflammatory dessert can still feel like indulgence. Deeply flavorful 85% dark chocolate is melted until glossy, then poured onto a sheet pan and showered with jewel-toned pomegranate arils, crunchy walnuts, and a delicate finish of flaky sea salt. Each bite delivers a satisfying mix of bitter, sweet, tart, and salty notes, along with a dose of polyphenols, antioxidants, and omega-3 fatty acids. Dark chocolate at 85% cacao is naturally lower in sugar and rich in flavonoids, which have been shown to help lower inflammatory markers like CRP. Pomegranate arils contribute punicalagins, powerful antioxidants linked to reduced oxidative stress, while walnuts provide plant-based omega-3s (ALA) that support a balanced inflammatory response. This bark comes together in under 15 minutes of active time, making it an easy make-ahead treat for satisfying a sweet craving without the inflammatory baggage of refined sugar and processed snacks. Store it in the fridge or freezer and break off a piece whenever you need a quick, nutrient-dense dessert. It's naturally gluten-free, dairy-free, and refined-sugar-free, and it travels well, making it perfect for holiday gifting, post-workout recovery snacks, or an elegant end to a Mediterranean-inspired dinner.
