Pan-Seared Lamb Chops with Charred Eggplant and Tahini
This Mediterranean-inspired dinner pairs juicy, pan-seared lamb chops with deeply smoky charred eggplant and a bright, nutty tahini sauce. The eggplant is blistered directly in a hot pan until its skin chars and the flesh turns silky and soft, echoing the traditional flame-roasted eggplants of Greek and Levantine kitchens. A quick sear gives the lamb chops a golden crust while keeping the inside tender and rosy, and everything is finished with a lemony tahini drizzle, fresh herbs, and a final flourish of good olive oil. Despite its restaurant-worthy presentation, this dish comes together in about 20 minutes, making it perfect for a quick but impressive weeknight dinner. It leans into core Mediterranean diet principles: extra virgin olive oil as the primary fat, a modest moderate portion of red meat, plenty of vegetables, and tahini (made from sesame seeds) providing healthy fats and plant-based richness. Serve with a simple side salad or warm whole-grain pita to round out the meal.

- 2 tbspfresh mint leaves, chopped, for garnish
- 2 tbsppomegranate seeds, optional, for garnish
- 0.25 tspcrushed red pepper flakes, optional, for garnish
Method
- Pat the lamb chops dry with paper towels. Rub with 1 tablespoon olive oil, 1 teaspoon salt, 1/2 teaspoon black pepper, minced garlic, and dried oregano. Let sit at room temperature while you prep the eggplant.
- Slice the eggplants into 1-inch rounds or thick wedges on a cutting board.
- Heat 2 tablespoons olive oil in a large cast iron skillet over high heat until shimmering. Add the eggplant slices in a single layer, season with 1/4 teaspoon salt, and sear without moving for 3-4 minutes per side until deeply charred and softened. Work in batches if needed. Transfer to a plate. 8:00
- Whisk together tahini, grated garlic, 2 tablespoons lemon juice, cold water, and 1/4 teaspoon salt in a small bowl until smooth and pourable, adding more water a teaspoon at a time if too thick.
- Wipe out the skillet if needed and heat the remaining 2 tablespoons olive oil over medium-high heat until very hot. Add the lamb chops and sear for 2-3 minutes per side for medium-rare, or until a deep golden crust forms and internal temperature reaches your desired doneness. 5:00
- Transfer the lamb chops to a plate and let rest for 5 minutes to allow the juices to redistribute. 5:00
- Arrange the charred eggplant on a serving platter, drizzle with the remaining 1 tablespoon lemon juice and remaining 1/4 teaspoon black pepper, then generously spoon the tahini sauce over the top.
- Nestle the rested lamb chops on top of the eggplant. Garnish with chopped parsley, mint, pomegranate seeds, and a pinch of red pepper flakes if using. Serve immediately.
