Lemon-Oregano Grilled Chicken Thighs with Charred Green Onions
Weeknight Greek fire, no dairy required. These bone-in, skin-on chicken thighs soak up a bright, herby marinade of fresh lemon juice, dried oregano, and garlic-infused olive oil (all the allium flavor, none of the FODMAP fructans) before hitting a screaming-hot grill. The skin crisps and chars while the meat stays juicy, and a final squeeze of lemon and scatter of flaky salt right off the grill brings the whole dish to life. The real showstopper, though, is the pile of charred green onions on top. Only the green tops are used (the low-FODMAP part of the scallion), blistered hard over direct heat until smoky and slightly sweet, then roughly chopped and heaped over the chicken with a drizzle of good olive oil. It's a simple, rustic technique that mimics the smoky allium flavor of a classic Greek taverna dish without any garlic or onion bulb in sight. This is a fast, high-protein, gut-friendly dinner that comes together in under 45 minutes of active time (plus a marinating window you can stretch overnight if you're planning ahead). Serve it with rice, roasted potatoes, or a simple cucumber-tomato salad for a complete low-FODMAP meal that doesn't skimp on bold, charred flavor.
Ingredients
- 8 piecesbone-in, skin-on chicken thighs, about 3 lbs / 1.4 kg
- 0.33 cupGarlic-infused olive oil, plus extra for drizzling
- 0.25 cuplemon juice, freshly squeezed, about 2 lemons
- 1 tablespoonlemon zest
- 2 tablespoonsdried oregano
- 1.5 teaspoonskosher salt, plus flaky salt for finishing
- 0.5 teaspoonblack pepper, freshly ground
- 2 bunchesgreen onions, green tops only, white bulbs discarded or saved for another use
- 1 lemonlemon wedges, cut into wedges, for serving
Method
- In a mixing bowl, whisk together the garlic-infused olive oil, lemon juice, lemon zest, dried oregano, kosher salt, and black pepper.
- Place the chicken thighs in a resealable bag or shallow dish and pour the marinade over them, turning to coat thoroughly.
- Cover and refrigerate to marinate, at least 30 minutes or up to overnight for deeper flavor. 30:00
- Preheat the grill to high heat, about 450-500°F (230-260°C), and oil the grates.
- Remove the chicken from the marinade, letting excess drip off, and place skin-side down on the hot grill.
- Grill the thighs, turning occasionally with tongs, until the skin is well charred and an instant-read thermometer reads 165°F (74°C) in the thickest part, about 20-25 minutes total. 20:00
- While the chicken finishes, toss the green onion tops with a drizzle of garlic-infused olive oil and lay them directly over the hot grill grates.
- Char the green onions, turning once or twice, until blistered, blackened in spots, and softened, about 4-5 minutes. 4:30
- Transfer the charred green onions to a cutting board and roughly chop into 1-inch pieces.
- Transfer the grilled chicken thighs to a serving platter and let rest for 5 minutes. 5:00
- Scatter the charred green onions over the chicken, finish with a drizzle of olive oil and a pinch of flaky salt, and serve with lemon wedges.
