Lemon-Garlic Grilled Chicken with Roasted Mediterranean Vegetables
This high-protein dinner pairs charred, garlicky grilled chicken breast with a vibrant medley of roasted Mediterranean vegetables, all brightened with fresh lemon juice. The chicken is marinated in a simple blend of crushed garlic, smoked paprika, dried oregano, olive oil and lemon, then grilled until juicy and lightly charred on the outside while staying tender inside. Meanwhile, zucchini, bell peppers and cherry tomatoes roast in the oven until caramelized and sweet, creating a colorful, nutrient-dense side that balances the smoky, savory chicken. Perfect for anyone following a high-protein diet, this meal delivers lean, muscle-supporting protein from the chicken breast while the roasted vegetables provide fiber, vitamins and antioxidants without excess carbohydrates. It's an ideal choice for athletes, those managing weight, or anyone wanting a satisfying, flavorful dinner that keeps them full without weighing them down. The dish comes together in under an hour, making it a practical weeknight option that doesn't sacrifice flavor for convenience. Serve it as is for a low-carb, high-protein meal, or add a scoop of quinoa or a side of crusty bread for those needing extra carbohydrates. Leftovers keep well in the fridge for a few days, making this recipe great for meal prep too.
