Kale Caesar Salad with Anchovy-Parmesan Crisps
This Kale Caesar Salad takes everything you love about the classic steakhouse starter and reworks it into a hearty, low-carb showstopper. Curly kale is massaged with olive oil and lemon juice to tenderize the tough leaves, then tossed in a rich, traditional Caesar dressing built from scratch with anchovy fillets, garlic, egg yolk, Dijon mustard, and good olive oil — no bottled dressing, no added sugar, and definitely no bread in sight. Instead of croutons, this version gets its satisfying crunch from baked parmesan crisps: little lacy rounds of shredded parmesan baked until golden and brittle, then crumbled or broken over the top. They deliver all the salty, savory crunch of a crouton with virtually zero carbs, making this salad both keto-friendly and deeply satisfying. Serve it as a hearty lunch on its own, or pair it with grilled chicken, shrimp, or steak for a fully loaded keto dinner. The dressing also doubles as a fantastic dip or drizzle for roasted vegetables, so consider making extra.</long_description> <parameter name="meta_description">Keto Kale Caesar Salad with a classic anchovy-garlic dressing and crunchy baked parmesan crisps instead of croutons.
