Harissa Sweet Potato and Chickpea Breakfast Muffin-Tops
These savory breakfast rounds take inspiration from the bold, warming flavors of North African harissa and combine them with the humble heartiness of sweet potato and chickpeas. Shredded sweet potato and mashed chickpeas form a naturally gluten-free base that's seasoned with smoky harissa paste, earthy cumin, and fresh garlic, then pressed into skillet-fried patties that crisp beautifully on the outside while staying tender within. A dollop of creamy yogurt and a scatter of fresh herbs finish each round, balancing the heat of the harissa with cool, tangy freshness. This recipe fits beautifully into a Mediterranean eating pattern by leaning on legumes and vegetables as the foundation of the meal, using extra virgin olive oil as the primary fat, and incorporating yogurt in moderation rather than as a main feature. It's a wonderful way to start the day with fiber, plant protein, and complex carbohydrates that will keep you satisfied without any refined grains or added sugar. Best of all, these muffin-tops are entirely hand-held and portable, making them perfect for busy mornings, meal prep, or a grab-and-go snack. Make a batch on the weekend and reheat them throughout the week in a skillet or toaster oven for a few minutes to restore their crispy edges.
Ingredients
- 2 cupsweet potato, peeled and shredded (about 1 large sweet potato)
- 1.5 cupchickpeas, cooked, drained, and rinsed if canned
- 2 tablespoonharissa paste, adjust to taste for spice level
- 1 teaspoonground cumin
- 2 clovegarlic, minced
- 2 largeegg, lightly beaten, acts as a binder
- 0.33 cupchickpea flour, or whole wheat flour, to help bind
- 0.75 teaspoonsalt
- 0.25 teaspoonblack pepper, freshly ground
- 3 tablespoonextra virgin olive oil, divided, for frying
- 0.5 cupplain Greek yogurt, for topping
- 2 tablespoonfresh parsley, chopped, for garnish
- 1 tablespoonfresh mint, chopped, for garnish, optional
- 1 wedgelemon, for serving, optional
Method
- Shred the peeled sweet potato using a box grater. Place the shreds in a clean kitchen towel and squeeze out as much excess moisture as possible; this helps the muffin-tops crisp up nicely.
- In a large mixing bowl, mash the chickpeas with a potato masher until mostly broken down but still slightly chunky for texture.
- Add the squeezed shredded sweet potato, harissa paste, cumin, minced garlic, beaten eggs, chickpea flour, salt, and black pepper to the bowl with the mashed chickpeas. Stir everything together until well combined and the mixture holds together when pressed.
- Heat 1 1/2 tablespoons of olive oil in a large nonstick skillet over medium heat. Scoop about 1/3 cup of the mixture per round and press gently with the back of the scoop or a spatula to flatten into a muffin-top shape, about 1/2 inch thick. Work in batches to avoid crowding the pan.
- Fry the rounds for 4-5 minutes on the first side until deeply golden and crisp, then carefully flip with the spatula and cook another 4-5 minutes on the other side until cooked through and golden. 9:00
- Transfer the cooked rounds to a plate and repeat with the remaining oil and batter, wiping out the skillet between batches if needed.
- Top each warm muffin-top with a dollop of plain Greek yogurt and a sprinkle of chopped parsley and mint. Serve with a lemon wedge on the side if desired.
