Harissa Carrot and Tahini Grain-Free Breakfast Bowl
Start your morning with a bowl that's as nourishing as it is satisfying. Sweet roasted carrots get a fiery kick from harissa paste, then nestle into a bed of warm, lightly spiced cauliflower rice — a grain-free swap that keeps this breakfast light but filling. A soft fried egg on top adds richness, while crumbled feta and toasted pine nuts bring briny, nutty contrast. A generous drizzle of tahini sauce ties it all together with a creamy, slightly bitter finish that balances the sweetness of the carrots and the heat of the harissa. This bowl leans into everything the Mediterranean diet celebrates: plenty of vegetables, extra virgin olive oil as the primary fat, nuts and seeds for healthy fats and texture, and modest portions of eggs and cheese. It's naturally gluten-free and low in refined carbohydrates, making it a great option for anyone watching blood sugar or simply looking for a vibrant, veggie-forward way to start the day. Despite being light on grains, it never feels like you're missing out — the combination of spice, creaminess, and crunch makes it feel like a treat. Perfect for a leisurely weekend brunch or a make-ahead weekday breakfast (the carrots and cauliflower rice reheat beautifully), this dish proves that healthy eating can still be bold, colorful, and deeply satisfying.

Method
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment for easy cleanup.
- In a mixing bowl, toss the carrots with harissa paste, 1 tablespoon of olive oil, and a pinch of salt until evenly coated.
- Spread the carrots in a single layer on the prepared baking sheet and roast until tender and caramelized at the edges, flipping once halfway through. 20:00
- While the carrots roast, make the tahini sauce: in a small bowl, whisk together the tahini, 1 tablespoon lemon juice, water, and a pinch of salt until smooth and pourable, adding more water if needed.
- Toast the pine nuts in a dry skillet over medium heat, stirring frequently, until golden and fragrant. Remove and set aside. 3:00
- In the same skillet, heat 1 tablespoon of olive oil over medium heat. Add the cauliflower rice, garlic, and cumin, and sauté until just tender, about 5 minutes. 5:00
- Season the cauliflower rice with the remaining lemon juice, salt, and pepper to taste. Divide between two bowls.
- Wipe out the skillet, add the remaining olive oil, and fry the eggs over medium-low heat until the whites are set but the yolks remain soft. 4:00
- Top each bowl of cauliflower rice with roasted harissa carrots and a fried egg.
- Sprinkle with crumbled feta, toasted pine nuts, and chopped parsley, then finish with a generous drizzle of tahini sauce. Serve immediately.
