Garlic-Crusted Steak Bites with Spiced Black Bean Mash
These garlic-crusted steak bites are everything you want in a high-protein dinner: a deeply caramelized, peppery crust on tender cubes of sirloin, pan-seared hot and fast to lock in juices, then finished with a garlic-herb butter baste. They sit atop a smoky, cumin-spiced black bean mash that brings its own plant-based protein and fiber to the plate, making this dish a powerhouse of muscle-supporting nutrition without sacrificing bold, satisfying flavor. The black bean mash is built on sautéed onion, garlic, cumin, and smoked paprika, simmered briefly with the beans and mashed to a rustic, creamy texture — no cream or heavy starches required. Pair that with the steak bites' garlic-pepper crust and a bright squeeze of lime, and you've got a restaurant-quality dinner that comes together in well under 40 minutes, perfect for meal prep or a quick weeknight protein boost. Whether you're an athlete chasing recovery gains, someone managing weight while preserving lean muscle, or simply craving a steakhouse-style dinner that loves your macros back, this dish delivers roughly 40+ grams of protein per serving with minimal added carbs. Serve it with a simple green salad or steamed greens to round out the plate.
Ingredients
- 1.5 lbsirloin steak, cut into 1-inch cubes, patted dry
- 6 clovesgarlic cloves, minced, divided
- 1.5 tspblack pepper, coarsely ground
- 1.5 tspkosher salt
- 2 tbspolive oil, divided
- 2 tbspunsalted butter
- 2 sprigsfresh rosemary, optional, for basting
- 0.5 cupyellow onion, finely chopped
- 1.5 tspground cumin
- 1 tspsmoked paprika
- 2 cans (15 oz each)black beans, drained and rinsed
- 0.33 cuplow-sodium chicken or vegetable broth
- 1 wholelime, juiced, plus wedges to serve
- 2 tbspfresh cilantro, chopped, for garnish
Method
- Pat the steak cubes dry with paper towels and place in a mixing bowl. Season generously with salt, black pepper, and half of the minced garlic; toss to coat evenly.
- Finely chop the onion and mince the remaining garlic; set aside for the bean mash.
- Heat 1 tablespoon olive oil in a saucepan over medium heat. Sauté the onion until softened and translucent, about 3-4 minutes. 4:00
- Add the remaining minced garlic, cumin, and smoked paprika to the saucepan; stir and cook until fragrant, about 30 seconds. 0:30
- Add the black beans and broth to the saucepan. Bring to a gentle simmer and cook for 8-10 minutes, stirring occasionally, until the beans are heated through and liquid is slightly reduced. 9:00
- Remove the beans from heat and mash with a potato masher to a rustic, creamy consistency. Stir in half the lime juice and season to taste with salt. Cover to keep warm.
- Heat the remaining olive oil in a cast iron skillet over high heat until shimmering and almost smoking.
- Add the seasoned steak cubes in a single layer, working in batches if needed to avoid crowding. Sear undisturbed for 1-2 minutes per side until a deep brown crust forms, turning with tongs, about 4-5 minutes total for medium-rare. 5:00
- Reduce heat to medium, add butter and rosemary sprigs to the skillet, and tilt the pan to spoon the melted garlic butter over the steak bites for 30-60 seconds. 0:45
- Remove steak bites from the skillet and squeeze the remaining lime juice over the top. Let rest for 2-3 minutes. 2:00
- Divide the black bean mash among plates, top with garlic-crusted steak bites, and garnish with fresh cilantro and lime wedges.
