Cultured Coconut Yogurt Parfait with Honey Pecans
This Cultured Coconut Yogurt Parfait is a gut-healing dessert that proves "therapeutic" and "delicious" can absolutely coexist. Rich, full-fat coconut milk is cultured with probiotic capsules for 24-48 hours to develop a tangy, thick yogurt teeming with beneficial bacteria — a cornerstone of the GAPS protocol's gut-restoring philosophy. Layered with raw-honey-toasted pecans and a dusting of cinnamon, this parfait delivers natural sweetness without any refined sugar, grains, or dairy, making it suitable even during stricter phases of the GAPS diet (introduce nuts and honey according to your practitioner's guidance). Beyond being delicious, this parfait is functional: the fermented coconut yogurt supplies probiotics to help rebalance gut flora, while the healthy fats from coconut milk and pecans support nutrient absorption and sustained energy. Raw honey, used sparingly, adds natural sweetness along with trace enzymes and antimicrobial properties, and cinnamon brings warmth along with its own gut-soothing reputation. Serve this as a nourishing dessert or a satisfying gut-friendly treat any time of day.</long_description> <parameter name="meta_description">GAPS-friendly dessert: probiotic coconut yogurt layered with honey pecans and cinnamon. - 1 tspground cinnamon
- 1 tbspcoconut oil
- 1 pinchsea salt

- Gently warm the coconut milk in a small saucepan over low heat until just lukewarm (about 100°F/38°C). Do not let it get hot, as heat will kill the probiotic bacteria.
- Pour the warmed coconut milk into a clean glass jar. Whisk in the probiotic powder until fully combined.
- Cover the jar loosely with its lid and place in a warm spot (around 75-85°F/24-29°C) to ferment for 24 to 48 hours, until thickened and tangy. 2160:00
