Crispy Skin Sea Bass with Ginger-Scallion Sauce and Snap Peas
This weeknight-friendly dinner proves that restaurant-quality fish is easy to achieve at home. Sea bass fillets are seared skin-side down until the skin turns impossibly crisp and golden, while the flesh stays moist and flaky underneath. The real showstopper is the ginger-scallion sauce: a sizzling-hot gluten-free oil poured over fresh ginger and scallions, releasing their aromatics into a glossy, savory-bright sauce that's spooned generously over the fish. Alongside, crisp-tender snap peas are blistered in a hot pan for just a few minutes, keeping their vibrant color and satisfying crunch. The whole dish comes together in under 30 minutes, making it perfect for a quick but impressive gluten-free dinner. Tamari stands in for soy sauce to keep things fully gluten-free without sacrificing that deep umami flavor, while a splash of rice vinegar brightens the finished sauce. Naturally gluten-free from start to finish, this recipe relies on whole, simple ingredients — fresh fish, vegetables, aromatics, and pantry staples like tamari and sesame oil — so there's no need to scrutinize labels or worry about hidden gluten. It's a light, protein-packed meal that comes together fast but tastes like you fussed over it all day.
Ingredients
- 2 filletssea bass fillets, skin-on, about 6 oz each, patted very dry
- 1 teaspoonsalt, divided
- 0.5 teaspoonblack pepper
- 3 tablespoonsNeutral oil, such as avocado or grapeseed oil, divided
- 2 tablespoonsfresh ginger, peeled and finely julienned or minced
- 4 stalksscallions, thinly sliced, white and green parts separated
- 1 tablespoongluten-free tamari
- 1 teaspoontoasted sesame oil
- 1 teaspoonrice vinegar
- 0.25 teaspoonsugar, optional, use gluten-free confirmed brand
- 8 ozSugar snap peas, trimmed
- 1 clovegarlic, thinly sliced
- 1 teaspoonToasted sesame seeds, for garnish, optional
Method
- Pat the sea bass fillets completely dry with paper towels, especially the skin. Season both sides with 3/4 teaspoon of the salt and the black pepper.
- In a small heatproof bowl, combine the julienned ginger and the white parts of the scallions.
- Heat 1 tablespoon of the neutral oil in a small saucepan over medium-high heat until shimmering and just starting to smoke, about 2 minutes. 2:00
- Carefully pour the hot oil over the ginger and scallion whites; it will sizzle. Stir in the tamari, sesame oil, rice vinegar, sugar (if using), and remaining scallion greens to make the ginger-scallion sauce. Set aside.
- Heat the remaining 2 tablespoons neutral oil in a large skillet over medium-high heat until shimmering.
- Place the sea bass fillets skin-side down in the hot skillet, pressing gently with a fish spatula for the first 15 seconds to prevent curling. Cook undisturbed until the skin is deeply golden and crisp. 5:00
- Flip the fillets and cook on the flesh side just until opaque and cooked through. Transfer to plates, skin-side up. 1:30
- In the same skillet over high heat, add the snap peas and garlic with the remaining 1/4 teaspoon salt. Toss and cook until blistered in spots but still crisp-tender. 3:00
- Spoon the ginger-scallion sauce generously over the crispy sea bass fillets. Serve immediately with the blistered snap peas on the side, sprinkled with toasted sesame seeds if desired.
