Charred Lemon-Pepper Mackerel with Pomegranate Herb Salad
This dish captures the essence of Mediterranean coastal cooking: simple, bold flavors built around fresh fish and vibrant produce. Mackerel, an omega-3-rich oily fish, gets a generous crust of cracked black pepper and sea salt before hitting a hot pan, where its skin turns deeply golden and crisp. Charred lemon halves add a smoky-tart finish that cuts through the fish's richness without any need for heavy sauces. Alongside, a confetti-bright salad of shaved fennel, fresh parsley, mint, and ruby pomegranate seeds offers crunch, aromatic lift, and a touch of natural sweetness. Tossed simply with extra virgin olive oil and lemon juice, the salad is a textbook example of Mediterranean plant-forward eating — minimal processing, maximum flavor. Together, the smoky seared fish and the cool, herbaceous salad create a dinner that's light yet satisfying, ready in under 30 minutes, and packed with the heart-healthy fats and antioxidants that define the Mediterranean way of eating.
