Buffalo Shrimp Lettuce Boats with Dairy-Free Garlic Oil Drizzle
These Buffalo Shrimp Lettuce Boats deliver all the bold, tangy heat of classic buffalo wings in a light, low-FODMAP-friendly package. Plump shrimp are seared until just cooked through, then tossed in a butter-and-hot-sauce buffalo glaze made without any onion or garlic powder — instead, a quick garlic-infused oil (made the low-FODMAP way, so the garlic solids are strained out and only the FODMAP-free flavored oil remains) drizzles over the top for that signature aromatic punch without the gut-irritating fructans. Crisp butter or romaine lettuce leaves stand in for a tortilla or bun, keeping things fresh, crunchy, and gluten-free. This recipe is naturally dairy-light and can be made fully dairy-free by swapping the butter in the buffalo sauce for a dairy-free butter alternative. It's a 30-minute dinner that's big on flavor but gentle on sensitive digestive systems, making it a great option for anyone managing IBS symptoms while still craving something spicy and satisfying. Garnish with thinly sliced scallion greens (the only low-FODMAP part of the scallion) and a sprinkle of chopped chives for a fresh, herby finish.
Ingredients
- 1.5 lblarge shrimp, peeled and deveined, tails removed
- 1 tbspolive oil, for searing shrimp
- 0.5 tspsalt
- 0.25 tspblack pepper
- 0.5 cupHot sauce, cayenne pepper sauce such as Frank's RedHot; check label for garlic/onion-free
- 3 tbspDairy-free butter, or regular unsalted butter if lactose tolerance allows
- 1 tspmaple syrup, optional, to balance heat
- 3garlic cloves, smashed, for infusing oil only — removed before serving
- 0.33 cupextra virgin olive oil, for garlic-herb infused oil
- 2 tbspfresh chives, finely chopped
- 2 tbspfresh parsley, finely chopped
- 1 tsplemon juice, freshly squeezed
- 2 headsbutter lettuce, leaves separated, washed and dried, for cups
- 2 tbspScallion greens, thinly sliced, green tops only, for garnish
- 1 mediumcarrot, julienned, optional for crunch
Method
- Make the garlic-infused oil: combine the extra virgin olive oil and smashed garlic cloves in a small saucepan over low heat. Warm gently for 4-5 minutes until the garlic is fragrant and sizzling softly but not browning. 5:00
- Remove the saucepan from heat and let the garlic steep in the warm oil for 5 minutes, then strain out and discard the garlic solids through a fine mesh strainer into a small bowl, keeping only the infused oil. 5:00
- Stir the chopped chives, parsley, and lemon juice into the strained garlic oil. Set the garlic-herb oil drizzle aside.
- Pat the shrimp dry and season with salt and black pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and sear for 1-2 minutes per side, until pink and opaque throughout. 3:00
- While the shrimp cook, melt the dairy-free butter in a mixing bowl (microwave in short bursts or melt in a small pan), then whisk in the hot sauce and maple syrup to make the buffalo sauce.
- Transfer the cooked shrimp to the bowl of buffalo sauce and toss until evenly coated.
- Arrange the lettuce leaves on a serving platter and divide the buffalo shrimp among them. Top with julienned carrot if using.
- Drizzle the garlic-herb oil generously over the shrimp lettuce boats and garnish with sliced scallion greens. Serve immediately while hot.
