Spicy Buffalo Tuna Lettuce Cups
These Spicy Buffalo Tuna Lettuce Cups take the classic flavors of buffalo wings and give them a light, gut-friendly twist that's perfect for a low-FODMAP lunch. Fresh tuna steaks are seared quickly in a hot pan to lock in flavor, then tossed while warm in a dairy-free buffalo sauce made from garlic-infused oil, hot sauce, and a touch of lactose-free butter for richness without the FODMAP load. The spicy tuna is piled high into crisp butter lettuce leaves, which stand in for the usual bun or tortilla, keeping this dish light, low-carb, and easy to digest. To balance the heat, thin cucumber ribbons are draped over each cup, adding a cool, refreshing crunch that tames the buffalo spice. A sprinkle of chopped chives and a drizzle of lactose-free ranch-style dressing finish things off, making every bite a satisfying contrast of spicy, cool, and creamy. This recipe uses garlic-infused oil instead of fresh garlic and onion to keep the dish low-FODMAP while still delivering that signature buffalo flavor base. Ready in under 30 minutes, this recipe is ideal for anyone following the elimination phase of the Low-FODMAP Diet who still craves bold, spicy flavors. It's naturally high in protein, gluten-free, and easily scaled up for meal prep lunches throughout the week.
