Spiced Garlic Chicken Sausage and White Bean Skillet Bake
This one-pan skillet bake delivers everything you want from a weeknight dinner: bold smoky-garlic flavor, minimal cleanup, and a serious protein punch. Lean chicken sausage is seared until golden, then simmered with creamy white beans, wilted kale, and a smoky-spiced tomato broth before finishing under the broiler for a bubbly, lightly charred top. Each serving delivers a satisfying combination of lean protein from the chicken sausage and fiber-rich plant protein from the cannellini beans, making it an ideal centerpiece for anyone following a high-protein eating plan. Beyond its nutritional profile, this dish is built for flavor layering: garlic and smoked paprika bloom in the rendered sausage fat, crushed tomatoes create a rich simmering broth, and fresh kale wilts right into the pan to add color and nutrients without extra dishes. It's a flexible recipe, too — swap in spinach or Swiss chard for the kale, or use chickpeas instead of cannellini beans if that's what you have on hand. Serve it straight from the skillet with crusty whole-grain bread or a simple green salad for a complete, muscle-friendly dinner that comes together in about 40 minutes with almost no fuss.

- 0.75 cuplow-sodium chicken broth
- 2 cans (15 oz each)cannellini beans, drained and rinsed
- 4 cupskale, stems removed, roughly chopped
- 0.5 cupParmesan cheese, freshly grated
- 0.5 tspsalt, to taste
- 0.25 tspblack pepper, to taste
- 2 tbspfresh parsley, chopped, for garnish
- 4 wedgeslemon wedges, for serving
Method
- Preheat the oven broiler to high and position a rack about 6 inches from the heat source.
- Slice the chicken sausage links into 1-inch pieces and mince the garlic.
- Heat olive oil in the cast iron skillet over medium-high heat. Add the sliced chicken sausage and sear, turning occasionally, until golden brown on all sides, about 5-6 minutes. 6:00
- Push the sausage to one side of the skillet. Add the minced garlic, smoked paprika, red pepper flakes, and oregano to the open space, and saute until fragrant, about 30-45 seconds. 0:45
- Stir in the crushed tomatoes and chicken broth, scraping up any browned bits from the bottom of the skillet.
- Add the cannellini beans and stir to combine. Bring the mixture to a simmer and cook, uncovered, for 8 minutes to let the flavors meld and the broth reduce slightly. 8:00
- Fold in the chopped kale a handful at a time, stirring until just wilted, about 2-3 minutes. Season with salt and black pepper. 3:00
- Sprinkle the grated Parmesan evenly over the top of the skillet mixture.
- Carefully transfer the skillet to the oven and broil until the top is bubbly and lightly browned, about 3-4 minutes. Watch closely to prevent burning. 3:30
- Remove the skillet from the oven using oven mitts, garnish with fresh parsley, and serve hot with lemon wedges on the side.
