Spiced Carrot and Chickpea Soup with Toasted Cumin Oil
This Moroccan-inspired soup turns humble carrots and chickpeas into something deeply comforting and nourishing. Sweet carrots are simmered with protein-rich chickpeas, onion, and garlic in a fragrant broth spiced with cumin, coriander, and a touch of harissa for warmth, then blended until silky smooth. A final drizzle of toasted cumin oil adds a burst of aroma right before serving, while fresh herbs and a squeeze of lemon brighten every spoonful. Built on extra virgin olive oil, legumes, vegetables, and warming spices instead of cream or butter, this soup fits beautifully into a Mediterranean way of eating. It's naturally vegetarian, easily made vegan, and packed with fiber and plant protein from the chickpeas, making it a satisfying yet light lunch. Serve it with crusty whole grain bread or a simple salad for a complete, heart-healthy midday meal.
