Soy-Glazed Seared Mackerel with Shaved Cucumber Ribbons
This weeknight plate pairs crisp-skinned mackerel with a glossy, umami-rich soy-ginger glaze that comes together in the same pan while the fish rests. Mackerel is naturally rich in healthy fats and delivers a hefty dose of protein, making this a satisfying yet light dinner that won't sit heavy. Shaved cucumber ribbons add crunch, water content and a cooling contrast to the warm, savoury glaze, while a scattering of sesame and scallion brings freshness without any cream or heavy sauces. Everything here is built for a quick, low-effort weeknight cook: one pan, one bowl, about fifteen minutes start to finish. The portion is deliberately modest and protein-forward rather than carb-heavy, so it's easy to finish and genuinely satisfying without feeling overly full. Keep the glaze light-handed — just enough to coat the fish in a thin, glossy layer — so the dish stays bright and savoury rather than sweet or greasy.
Ingredients
- 2 filletsmackerel fillets, about 120g each, skin on, pin-boned
- 1 largecucumber, shaved into ribbons with a peeler
- 3 tbspsoy sauce, low sodium if possible
- 1 tbspfresh ginger, grated or minced
- 1 clovegarlic, minced
- 1 tbsprice vinegar
- 1 tspMonk fruit or allulose sweetener, optional, to round out the glaze without sugar
- 1 tspAvocado oil, for searing
- 1 tspsesame seeds, for garnish
- 1 stalkScallion, thinly sliced, for garnish
- salt, a small pinch, to season cucumber
Method
- Using a vegetable peeler, shave the cucumber lengthwise into long ribbons. Place in a mixing bowl, sprinkle with a small pinch of salt and toss gently; set aside to crisp while you cook the fish.
- In a small bowl, whisk together the soy sauce, grated ginger, minced garlic, rice vinegar and sweetener to make the glaze.
- Pat the mackerel fillets completely dry with paper towel, especially the skin, to help it crisp.
- Heat the avocado oil in a non-stick skillet over medium-high heat until shimmering. Lay the mackerel in skin-side down and press gently with tongs for a few seconds to prevent curling.
- Sear undisturbed until the skin is deeply golden and crisp. 3:00
- Flip the fillets and cook the flesh side briefly until just cooked through. 1:30
- Pour the soy-ginger mixture into the pan around the fish. Let it bubble and reduce, spooning the glaze over the fillets, until thickened and glossy. 1:30
- Drain any excess liquid from the cucumber ribbons and divide them between two plates. Top each with a glazed mackerel fillet and spoon over any remaining glaze from the pan.
- Scatter with sesame seeds and sliced scallion, then serve immediately.
