Seared Beef Tenderloin Tips with Smoky Harissa and Garlic Yogurt
This dish takes its cues from the bold, sun-drenched flavors of North Africa and the eastern Mediterranean, pairing lean beef tenderloin with the deep, smoky heat of harissa and the cooling tang of garlicky yogurt. Because the Mediterranean diet calls for red meat only occasionally, this recipe keeps portions modest and lean, letting a few bites of perfectly seared beef go a long way when balanced with vegetables, herbs, and good olive oil. The tenderloin is cut into small cubes and seared hard and fast in a hot pan, so it develops a deep caramelized crust while staying tender and juicy inside. The harissa-cumin glaze clings to the beef in the final moments of cooking, infusing every bite with smoky, spicy depth, while a simple garlic yogurt sauce—built on strained yogurt, lemon, and a touch of olive oil—cools and balances the heat. A scattering of fresh mint and a drizzle of extra virgin olive oil finish the plate with brightness and fragrance. Serve it over a bed of greens, alongside warm whole grain pita, or with a simple chickpea salad for a complete, satisfying dinner that comes together in well under 30 minutes.

Method
- Pat the beef tenderloin cubes dry with paper towels and season generously with salt and black pepper.

- Heat the cast iron skillet over high heat until very hot, then add the remaining olive oil.
- Add the marinated beef cubes in a single layer, being careful not to overcrowd the pan. Sear undisturbed for 1-2 minutes to develop a deep crust. 2:00
- Using tongs, flip and toss the beef cubes to sear the remaining sides, cooking for another 2-3 minutes for medium-rare, or to your desired doneness. 3:00
- Remove the skillet from heat and squeeze the remaining lemon juice over the beef, tossing to coat evenly.
- Spread the garlic yogurt sauce over a serving platter, pile the seared beef tips on top, and scatter with fresh mint, parsley, and lemon zest before serving.
