Seared Beef Sirloin with Charred Scallion-Walnut Relish
Steak night gets a weeknight-friendly, keto-smart makeover. Lean sirloin is seared hard in a hot pan for a deep crust, then sliced thin and topped with a punchy relish of charred scallions, toasted walnuts, soy sauce, rice vinegar and a little chili for heat. There's no cream or heavy butter sauce here — all the richness comes from a small amount of olive oil plus the natural savoriness of seared beef and umami-packed soy, so the plate stays light but deeply flavorful. This recipe is built around a modest, protein-forward portion: about 5-6 ounces of sirloin per serving delivers plenty of protein without piling on excess food, and the relish adds brightness, crunch and a bit of fiber from the scallions without any heavy cream or starchy sides. A simple pile of sautéed greens or a quick cucumber salad rounds things out if you want a larger plate, but the steak and relish alone make a satisfying, quick dinner. Ready in about 20 minutes with minimal cleanup, this is the kind of steak dinner you can pull together after a long day — bold, savory, a little smoky, and sized just right.
Ingredients
- 12 ozsirloin steak, two 6 oz steaks, trimmed of excess fat, patted dry
- 0.75 tspkosher salt
- 0.5 tspblack pepper, freshly cracked
- 2 tbspolive oil, divided
- 1 bunchscallions, root ends trimmed
- 0.33 cupwalnuts, roughly chopped
- 1 clovegarlic, minced
- 1.5 tbspsoy sauce, low sodium if possible
- 1 tbsprice vinegar
- 0.5 tspred chili flakes, or 1 fresh red chili, finely chopped
- 1 tsptoasted sesame oil
Method
- Pat the sirloin steaks very dry and season both sides generously with kosher salt and black pepper. Let sit at room temperature for 5-10 minutes while you prep the scallions.
- Heat a cast iron skillet over medium-high heat with 1 tablespoon olive oil until shimmering. Add the whole scallions and char, turning occasionally, until blistered and softened, 3-4 minutes. Remove and set aside. 4:00
- Chop the charred scallions into small pieces and place in a small mixing bowl along with the chopped walnuts, minced garlic, soy sauce, rice vinegar, chili flakes and sesame oil. Stir to combine; set the relish aside.
- Return the skillet to medium-high heat and add the remaining 1 tablespoon olive oil. Once hot, sear the steaks for 3-4 minutes per side for medium-rare, or until a deep brown crust forms and internal temperature reaches your preferred doneness. 7:00
- Transfer the steaks to a cutting board and let rest for 5 minutes to let the juices redistribute. 5:00
- Slice the steak thinly against the grain and arrange on plates. Spoon the charred scallion-walnut relish generously over the top and serve immediately.
