Roasted Purple Cauliflower with Tahini Drizzle
This striking side dish transforms humble cauliflower into a showstopper, using the deep purple variety prized for its anthocyanin content—the same powerful antioxidant pigments found in blueberries and red cabbage. Roasting the florets at high heat caramelizes their natural sugars and deepens their flavor while preserving much of their nutrient density, and a warm blend of cumin and smoked paprika adds earthy, slightly smoky complexity that pairs beautifully with the cauliflower's natural sweetness. Once roasted, the cauliflower is finished with a silky tahini sauce brightened by fresh lemon juice and garlic, delivering a dose of calcium, healthy monounsaturated fats, and anti-inflammatory compounds from sesame seeds. A scattering of ruby pomegranate seeds adds a pop of color, a burst of juicy sweetness, and even more polyphenols, making this dish as nutritious as it is beautiful. Perfect alongside grilled fish, roasted chicken, or a hearty grain bowl, this Middle Eastern-inspired side comes together in under 40 minutes and fits seamlessly into an anti-inflammatory eating pattern. It's a wonderful way to introduce more colorful, antioxidant-rich vegetables into your weekly rotation without sacrificing bold flavor.
