Pan-Seared Pork Chops with Charred Grapes and Thyme Jus
A juicy, protein-packed dinner that proves keto food doesn't need cream or butter-heavy sauces to taste rich. Lean, thick-cut pork chops are seared hard in a hot pan to build a deep golden crust, then rested while a handful of grapes blister and char right alongside them, releasing a natural, low-carb sweetness. A splash of chicken broth and sherry vinegar deglazes the pan, picking up all those browned bits, and a few sprigs of fresh thyme and a small knob of butter turn it into a glossy, savory-sweet jus in minutes. This is a weeknight-friendly plate built around a single pan and a short ingredient list, so there's very little cleanup and almost no waiting around. The portion is sized to be satisfying without being heavy: one moderate chop per person delivers well over 30 grams of protein, while the charred grapes and a simple side of sautéed greens add fibre, brightness, and volume to the plate without piling on carbs or grease. It's a meal that feels indulgent but stays light on the stomach, with flavour coming from char, herbs, and a bright vinegar-broth pan sauce rather than heavy fat. Serve it straight from the pan with the jus spooned over the top and a wedge of lemon on the side if you like a little extra lift. It reheats well in small portions too, making it an easy one to prep ahead and enjoy across a couple of nights.

- 0.33 cupchicken broth, low sodium
- 1 tbspsherry vinegar
- 4 sprigfresh thyme
- 1 tspunsalted butter, small knob, to finish the sauce
- 3 cupbaby spinach, for a quick wilted side
Method
- Pat the pork chops dry with paper towel and season both sides with salt and pepper.
- Heat half the olive oil in a heavy skillet over high heat until just smoking. Add the chops and sear without moving for 3-4 minutes until deeply golden. 4:00
- Flip the chops and sear the second side for 3-4 minutes until cooked through and an internal temperature of 63°C (145°F) is reached. Transfer to a plate to rest. 4:00
- Add the remaining olive oil and the grapes to the same hot pan. Cook, shaking occasionally, for 2-3 minutes until the skins blister and char in spots. 2:30
- Push the grapes to one side, add the garlic, and cook for 30 seconds until fragrant. 0:30
- Pour in the chicken broth and sherry vinegar, scraping up any browned bits from the bottom of the pan. Add the thyme sprigs and simmer until slightly reduced. 2:00
- Remove the pan from heat, discard the thyme sprigs, and swirl in the butter until the sauce is glossy.
- Wipe out any excess fat from the pan if needed, then quickly wilt the spinach over medium heat for 1-2 minutes, seasoning with a pinch of salt. 1:30
- Slice the rested pork chops if desired, plate with the wilted spinach, and spoon the charred grapes and thyme jus over the top to serve.
