Pan-Seared Duck Breast with Five-Spice and Charred Baby Bok Choy
This weeknight-friendly dinner delivers big restaurant flavor with very little effort. A single duck breast is scored and seared skin-side down until the fat renders out and the skin turns deeply crisp, then rubbed with warm, fragrant Chinese five-spice and finished to a perfect medium. The rendered duck fat is used to char baby bok choy in the same pan, so nothing goes to waste and every bite picks up that rich, savory flavor. A quick splash of rice vinegar at the end brightens the dish and cuts through the richness, while a little soy sauce and fresh ginger add umami depth without any heavy sauces or cream. The whole meal comes together in one pan in about 20 minutes, making it an easy, keto-friendly dinner that's light on carbs but still deeply satisfying. Portions here are kept modest and protein-forward, with plenty of fibrous greens and a savory broth-like pan sauce to keep things comfortable and easy to finish.
Ingredients
- 2 wholeDuck breast, about 170g each, skin on
- 1.5 tspChinese five-spice powder
- 0.5 tspsalt
- 4 headsbaby bok choy, halved lengthwise
- 1 tbspfresh ginger, minced
- 2 clovesgarlic, minced
- 1.5 tbsprice vinegar
- 1 tbspsoy sauce, low sodium preferred
- 1 tspsesame oil
- 2 stalksscallions, thinly sliced, for garnish
- 1 tspsesame seeds, optional, for garnish
Method
- Pat the duck breasts dry and score the skin in a tight crosshatch pattern, cutting through the fat but not into the meat. Season both sides with salt and the five-spice powder, pressing it into the skin.
- Place the duck breasts skin-side down in a cold cast iron skillet, then set over medium heat. Let the fat render slowly as the pan heats up, pressing lightly with tongs so the skin makes even contact. 7:00
- Once the skin is deep golden and crisp, flip the duck breasts and sear the other side for 2-3 minutes for medium doneness. Transfer to a cutting board to rest, leaving the rendered duck fat in the skillet. 3:00
- Add the halved bok choy to the hot skillet with the duck fat, cut-side down. Let them sit undisturbed until charred and blistered in spots. 2:30
- Add the ginger and garlic to the pan with the bok choy and stir briefly until fragrant. 0:30
- In a small bowl, stir together the rice vinegar, soy sauce, and sesame oil. Drizzle over the bok choy in the pan and toss to coat, then remove from heat.
- Slice the rested duck breasts on a diagonal. Divide the charred bok choy between two plates, top with sliced duck, and garnish with scallions and sesame seeds if using.
