Roasted Chickpeas
These roasted chickpeas are the ultimate Mediterranean Diet snack: simple, satisfying, and endlessly customizable. Canned chickpeas are dried thoroughly, then tossed with good extra virgin olive oil, smoky paprika and a generous pinch of salt before roasting until deeply golden and crackly on the outside while staying tender within. The result is a crunchy, savory bite that beats any bag of processed chips, delivering fiber and plant-based protein in every handful. This recipe comes together with pantry staples and requires almost no hands-on effort beyond a quick toss and a stir halfway through baking. The key to maximum crunch is patience — really drying the chickpeas before they hit the oil, and giving them enough time in a hot oven to crisp through. Once roasted, let them cool completely before transferring to a jar; they'll keep their crunch on the counter for several days, making them perfect for meal-prepping a week's worth of healthy snacking. Enjoy them straight from the jar, scattered over salads and soups for crunch, or alongside hummus and olives for a Mediterranean-style snack board. Feel free to swap the smoked paprika for cumin, za'atar, or chili flakes depending on your mood — the base technique stays the same.</long_description> <parameter name="meta_description">Crunchy roasted chickpeas with olive oil & smoked paprika.
