Chocolate Avocado Mousse with Raspberries
This rich, velvety mousse proves that a diabetic-friendly dessert can still feel indulgent. Ripe avocados create an impossibly creamy, spoonable texture without any dairy or added sugar, while unsweetened cocoa powder delivers deep chocolate flavor and a dose of antioxidants. A touch of stevia keeps the sweetness in check without spiking blood glucose, and a splash of almond milk helps everything blend into a smooth, mousse-like consistency. Topped with fresh raspberries — a low-glycemic fruit packed with fiber and vitamin C — this dessert balances healthy monounsaturated fats from the avocado with just enough natural sweetness to satisfy a chocolate craving. It comes together in minutes with no baking required, making it an easy make-ahead treat for anyone managing blood sugar while still wanting something decadent after dinner. Because portion control matters on a diabetic diet, this recipe is divided into individual servings, so you can enjoy a satisfying dessert without overdoing it on carbohydrates. Chill the mousse briefly before serving for the best silky texture.
