Toasted Oat & Date Breakfast Bars
Start your morning with these hearty, chewy breakfast bars that pack naturally occurring sweetness from Medjool dates instead of refined sugar. Rolled oats form a toasty, satisfying base while a blend of dates, almond butter, and plant milk binds everything together into a soft, fudgy texture. Toasted walnuts add crunch and a dose of plant-based omega-3 fatty acids, making these bars as nourishing as they are delicious. These bars are designed for busy mornings — simply bake a batch on the weekend, slice, and store for an easy grab-and-go breakfast all week long. They're entirely plant-based, free of dairy, eggs, and refined sugar, and rely on whole-food ingredients like oats, dates, nuts, and seeds to deliver fiber, healthy fats, and sustained energy. A sprinkle of flaxseed meal boosts the omega-3 content even further, supporting heart health and steady blood sugar levels throughout the morning. Whether you're following a vegan lifestyle or just looking for a wholesome homemade alternative to store-bought granola bars, this recipe comes together with simple pantry staples and minimal hands-on time. Pack one in your bag, pair it with a piece of fruit, and you've got a balanced, energizing start to your day.</long_description> <parameter name="meta_description">Chewy vegan oat breakfast bars with dates, almond butter & walnuts. - 1 tspvanilla extract
- 0.25 tspFine sea salt
- 0.5 cuphot water, for soaking dates, as needed
Method
- Preheat the oven to 350°F (175°C). Line the baking pan with parchment paper, leaving an overhang on two sides for easy removal.
- Spread the walnuts on a baking sheet and toast in the oven for 6-8 minutes until fragrant, then set aside to cool slightly. 7:00
- Place the pitted dates in a small bowl and cover with hot water. Let soak for 10 minutes to soften, then drain, reserving a little soaking liquid if needed. 10:00
- Transfer the softened dates to the food processor along with the almond butter, almond milk, and vanilla extract. Blend until smooth and caramel-like, scraping down the sides as needed.
- In the large mixing bowl, combine the rolled oats, chopped toasted walnuts, ground flaxseed, cinnamon, and salt. Stir to mix evenly.
- Pour the date mixture over the dry ingredients and fold together with a spatula until fully combined and no dry oats remain.
- Transfer the mixture to the prepared baking pan. Press firmly and evenly into the pan using the spatula or damp hands to compact it well.

- Let the bars cool completely in the pan on a wire rack, about 30 minutes, before lifting out using the parchment overhang. 30:00
- Place the cooled slab on a cutting board and slice into 8 bars using a chef's knife. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 2 weeks.
