Teriyaki Tofu & Brown Rice Power Bowl with Crispy Chickpeas
This power bowl layers two plant-based proteins — golden pan-crisped tofu and oven-roasted chickpeas — over a bed of chewy brown rice, so every bite delivers staying power without a drop of meat or dairy. Steamed broccoli and crunchy shredded carrots add color, fiber, and a dose of vitamins, while a quick homemade teriyaki sauce (just soy sauce, maple syrup, rice vinegar, garlic, and ginger) ties everything together with a sweet-savory glaze that's far gentler on sodium than most bottled versions. It's the kind of lunch that meal-preps beautifully: cook the rice, crisp the tofu and chickpeas, steam the veg, and whisk the sauce once, then portion into containers for a week of grab-and-go bowls. Finished with a scatter of toasted sesame seeds and sliced scallions, this bowl is a nutrient-dense, fully vegan answer to the craving for cozy, takeout-style teriyaki — minus the fish sauce, honey, or animal-derived additives often hiding in store-bought versions. Beyond being delicious, this bowl is built with nutrition in mind: tofu and chickpeas together supply a complete protein profile and plenty of iron and zinc, brown rice contributes whole-grain fiber and B vitamins, and the broccoli and carrots round things out with vitamin C, beta-carotene, and additional fiber to support heart health, blood sugar balance, and digestion.

Method
- Press the tofu between paper towels with a heavy object on top for at least 10 minutes to remove excess moisture, then cut into 1-inch cubes.
- Rinse the brown rice, then combine with water in a medium saucepan according to package ratio. Bring to a boil, cover, reduce heat, and simmer until tender. 40:00
- Preheat the oven to 400°F (200°C). Toss the dried chickpeas with 1 tablespoon vegetable oil, salt, and black pepper on a baking sheet.
- Roast the chickpeas, shaking the pan halfway through, until golden and crispy. 25:00
- While the chickpeas roast, whisk together soy sauce, maple syrup, rice vinegar, minced garlic, grated ginger, and water in a small saucepan.
- Bring the sauce to a gentle simmer over medium heat, then stir in the cornstarch slurry and cook, stirring, until thickened into a glossy glaze. 3:00
- Heat the remaining vegetable oil and sesame oil in a large non-stick skillet over medium-high heat. Add the tofu cubes in a single layer and cook, turning occasionally, until crispy and golden on all sides. 10:00
- Pour about half of the teriyaki sauce over the crispy tofu in the skillet and toss to coat, cooking for another minute until glazed. 1:00
- While the tofu cooks, steam the broccoli florets in a steamer basket over simmering water until just tender and bright green. 5:00
- Shred the carrots using a box grater into a mixing bowl.
- Divide the cooked brown rice among four bowls. Top each with glazed tofu, crispy roasted chickpeas, steamed broccoli, and shredded carrots.
- Drizzle the remaining teriyaki sauce over each bowl, then garnish with toasted sesame seeds and sliced scallions before serving.
