Shirataki Noodle Bowl with Spicy Peanut Sauce and Crispy Tofu
This gluten-free noodle bowl proves that light eating doesn't mean skimping on flavor. Shirataki noodles — made from the konjac yam and naturally low in carbs and calories — soak up a bold, creamy peanut sauce spiked with gluten-free tamari, rice vinegar, and chili garlic sauce. Crispy pan-fried tofu cubes add satisfying protein and texture, while shredded carrots and scallions bring crunch and freshness to every bite. Because shirataki noodles have a distinct texture and faint odor straight from the package, a quick rinse and dry-sauté step is essential to transform them into a perfect vehicle for the peanut sauce. The whole dish comes together in under 30 minutes, making it an ideal make-ahead lunch for anyone following a gluten-free diet — just be sure to use certified gluten-free tamari and peanut butter, since cross-contamination can sneak into processed condiments. Serve it warm or chilled, straight from the fridge, for a quick weekday lunch that feels indulgent but keeps things light and nutrient-dense. Top with crushed peanuts, sesame seeds, or fresh cilantro for extra flair.

Method
- Drain the shirataki noodles in a colander and rinse thoroughly under cold water for 1-2 minutes to remove the packaging liquid and odor.

- Thin the peanut sauce with warm water, 1 tablespoon at a time, whisking until it reaches a pourable, creamy consistency.
- Add the remaining tablespoon of oil to the skillet with the dried shirataki noodles over medium heat, then pour in the peanut sauce and toss to coat the noodles evenly, warming through for about 2 minutes. 2:00
