Pomegranate Walnut Quinoa Salad
This Pomegranate Walnut Quinoa Salad is a vibrant, Persian-inspired dish that turns simple pantry staples into something truly special. Fluffy cooked quinoa forms the hearty base, studded with juicy pomegranate arils that burst with sweet-tart flavor, crunchy toasted walnuts, and a generous handful of fresh mint and parsley. A light lemon-olive oil vinaigrette ties everything together, keeping the salad refreshing rather than heavy. Perfect for a WW-friendly lunch or a stunning side dish, this salad delivers complete plant protein and fiber from the quinoa, heart-healthy fats from the walnuts and olive oil, and a boost of antioxidants from the pomegranate. It comes together in under 30 minutes, making it an ideal make-ahead option for meal prep—the flavors actually deepen as it sits in the fridge. Whether you're serving it alongside grilled chicken or fish, or enjoying it on its own as a light vegetarian meal, this colorful salad proves that healthy eating can be as beautiful as it is delicious. It's naturally gluten-free and easily made vegan by using maple syrup instead of honey in the dressing.
