Miso-Glazed Eggplant & Soba Skillet
This Miso-Glazed Eggplant & Soba Skillet is a weeknight dinner that delivers deep umami flavor without any animal products. Cubes of Japanese eggplant are pan-seared until golden and tender, while crispy pan-fried tofu adds satisfying protein and texture. Everything gets tossed together with nutty buckwheat soba noodles in a glossy, sweet-savory miso glaze built from white miso, maple syrup, rice vinegar, and a touch of sesame oil. Finished with a scatter of scallions and toasted sesame seeds, this dish is equal parts comforting and vibrant. It comes together in about 35 minutes in a single large skillet (plus a pot for boiling noodles), making it an easy choice for busy evenings when you still want something that tastes like it took more effort than it did. Packed with plant-based protein from tofu, fiber from buckwheat soba, and the gut-friendly benefits of fermented miso, this recipe fits beautifully into a vegan diet while being hearty enough to satisfy any appetite. It's naturally free of dairy, eggs, and honey, and can easily be made gluten-free by swapping in 100% buckwheat soba and tamari instead of soy sauce.</long_description> <parameter name="meta_description">Sticky miso-glazed eggplant, crispy tofu, and silky soba noodles come together in one skillet for a quick, cozy vegan dinner.

- Drain the noodles in a colander, rinse briefly under cold water to stop cooking, and set aside.
