Herbed Quinoa and Roasted Root Vegetable Skillet with Crispy Chicken Thighs
This hearty harvest skillet delivers all the comfort of a slow-roasted dinner in a fraction of the time, and it's entirely gluten-free. Bone-in, skin-on chicken thighs are seared until the skin turns deeply golden and crackling, then nestled on top of a bed of nutty quinoa and sweet, caramelized root vegetables that soak up all the rendered chicken fat and pan drippings as everything finishes cooking together in the oven. We swapped traditional farro for quinoa, a naturally gluten-free whole grain that offers the same satisfying chew and nutty flavor without any risk of cross-contamination, making this dish safe for anyone managing celiac disease or gluten sensitivity. The real finishing touch is a vibrant parsley-garlic oil spooned over the top just before serving, which cuts through the richness of the chicken and adds a fresh, herbaceous brightness that ties the whole dish together. Because everything cooks in a single oven-safe skillet, cleanup is minimal and the flavors have a chance to meld beautifully as the quinoa absorbs the savory juices from the chicken and vegetables. It's an ideal weeknight dinner that feels special enough for a weekend gathering, and it keeps well as leftovers for lunch the next day.
Ingredients
- 6 piecebone-in, skin-on chicken thighs, about 2.5 lbs total
- 1.5 tspkosher salt, divided
- 0.75 tspblack pepper, freshly ground, divided
- 4 tbspolive oil, divided
- 3 largecarrots, peeled and cut into 1-inch chunks
- 2 largeparsnips, peeled and cut into 1-inch chunks
- 1 largeyellow onion, cut into 1-inch wedges
- 5 clovegarlic cloves, divided, minced
- 1.5 cupquinoa, rinsed, certified gluten-free
- 2.5 cuplow-sodium chicken broth, certified gluten-free
- 1 tbspfresh thyme leaves, chopped, plus extra for garnish
- 1 tbspfresh rosemary, chopped
- 1 cupfresh flat-leaf parsley, packed leaves, divided
- 1 wholelemon, zested and juiced
- 0.25 tspred pepper flakes, optional
Method
- Preheat the oven to 400°F (200°C). Pat the chicken thighs completely dry with paper towels, then season both sides generously with 1 teaspoon salt and 1/2 teaspoon black pepper.
- Heat 1 tablespoon olive oil in the cast iron skillet over medium-high heat. Add the chicken thighs skin-side down and sear until deeply golden and crispy, about 6-7 minutes. Flip and sear the other side for 3-4 minutes, then transfer the chicken to a plate (it will finish cooking later). 11:00
- On a cutting board, peel and chop the carrots and parsnips into 1-inch chunks, and cut the onion into wedges. Mince the garlic.
- Pour off all but 2 tablespoons of fat from the skillet, keeping the skillet over medium heat. Add the carrots, parsnips, and onion, tossing to coat in the fat. Cook, stirring occasionally, until the vegetables begin to caramelize, about 8 minutes. 8:00
- Add 3 cloves of minced garlic, the rinsed quinoa, thyme, and rosemary to the skillet. Stir to combine and toast for 1 minute until fragrant. 1:00
- Pour in the chicken broth and the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Stir well, then nestle the seared chicken thighs, skin-side up, on top of the quinoa and vegetable mixture.
- Transfer the skillet to the preheated oven and bake until the quinoa has absorbed the liquid, the vegetables are tender, and the chicken reaches an internal temperature of 165°F (74°C), about 25-30 minutes. 27:30
- While the skillet bakes, make the parsley-garlic oil: in a small bowl, finely chop the remaining parsley and combine with the remaining 2 tablespoons olive oil, remaining 2 cloves minced garlic, lemon zest, lemon juice, and red pepper flakes if using. Season with a pinch of salt.
- Remove the skillet from the oven and let it rest for 5 minutes. Spoon the parsley-garlic oil generously over the chicken and quinoa. Garnish with extra fresh thyme and serve directly from the skillet. 5:00
