Garlic-Harissa Shrimp and Chickpea Rice Skillet
This one-skillet dinner stacks protein from two directions: juicy, garlicky shrimp and crispy-edged chickpeas, both nestled into a smoky-spicy harissa tomato rice. Harissa paste brings deep North African heat and smokiness, while a generous hit of garlic and a squeeze of lemon at the end keep everything bright. It's the kind of dinner that feels indulgent but is built almost entirely from lean, satiating protein sources and fiber-rich legumes, making it a natural fit for anyone following a high-protein eating pattern. The technique is simple but builds real flavor: chickpeas are first roasted until crisp in a hot skillet, then set aside while the rice toasts in the same pan, soaking up garlic, harissa, and tomato before simmering until tender. The shrimp go in last, so they cook gently in just a few minutes without turning rubbery, and the crispy chickpeas are folded back in right at the end to keep their texture. Feta and fresh herbs finish the dish with a cooling, tangy contrast to the harissa's heat. Serve it straight from the skillet with extra lemon wedges and warm flatbread or a simple cucumber salad on the side. It's weeknight-friendly, needs only one pan, and delivers a hearty 30+ grams of protein per serving thanks to the shrimp, chickpeas, and a sprinkle of feta — ideal for muscle recovery, satiety, and a satisfying end to a busy day.
Ingredients
- 1.5 lblarge shrimp, peeled and deveined, tails removed
- 2 cans (15 oz each)canned chickpeas, drained, rinsed, and patted dry
- 4 tbspolive oil
- 6 clovesgarlic, minced
- 3 tbspharissa paste, adjust to taste
- 2 tbsptomato paste
- 1.5 cuplong-grain white rice, rinsed
- 1 can (14.5 oz)diced tomatoes
- 2.5 cupchicken or vegetable broth
- 1 tspsmoked paprika
- 1 tspground cumin
- 1.5 tspsalt, divided, plus more to taste
- 0.5 tspblack pepper
- 1 wholelemon, juiced, plus wedges to serve
- 0.5 cupfeta cheese, crumbled
- 0.25 cupfresh parsley or cilantro, chopped, for garnish
Method
- Pat the drained chickpeas very dry with paper towels; moisture will prevent them from crisping.
- Heat 2 tablespoons olive oil in a large deep skillet over medium-high heat. Add the chickpeas and cook, stirring occasionally, until golden and crispy in spots, about 8-10 minutes. Season with a pinch of salt, then transfer to a bowl and set aside. 9:00
- Pat the shrimp dry and toss with a pinch of salt and pepper; set aside while you build the rice base.
- Add the remaining 2 tablespoons olive oil to the same skillet over medium heat. Add minced garlic and cook until fragrant, about 30 seconds, stirring constantly so it doesn't burn. 0:30
- Stir in the harissa paste and tomato paste, cooking for 1-2 minutes until darkened and fragrant. 1:30
- Add the rinsed rice, smoked paprika, cumin, remaining salt, and black pepper. Stir to coat the rice in the paste and toast for about 1 minute. 1:00
- Pour in the diced tomatoes and broth, scraping up any browned bits from the bottom of the pan. Bring to a boil.
- Reduce heat to low, cover, and simmer until the rice is tender and most of the liquid is absorbed, about 18-20 minutes. 19:00
- Uncover and nestle the shrimp into the rice in an even layer. Cover again and cook until the shrimp are pink and just cooked through, about 5-6 minutes. 5:30
- Fold the crispy chickpeas back into the skillet along with the lemon juice, stirring gently to combine without breaking up the shrimp.
- Taste and adjust salt, pepper, or harissa as needed. Sprinkle with crumbled feta and chopped parsley or cilantro just before serving with extra lemon wedges.
