Cinnamon Roll Protein Bites
These Cinnamon Roll Protein Bites capture all the cozy, swirled-sugar flavor of a bakery cinnamon roll in a wholesome, no-bake snack that fits beautifully into a Mediterranean way of eating. Rolled oats and cashew butter provide a base of healthy fats, fiber, and plant protein, while a scoop of vanilla protein powder and warm cinnamon round out the flavor without any oven time. A light drizzle of Greek yogurt icing adds just enough sweetness to echo the classic pastry, while keeping added sugar to a minimum. Perfect for meal prep, these bites come together in about fifteen minutes and store well in the fridge or freezer, making them an easy grab-and-go snack for busy weeks. They deliver a satisfying balance of protein, healthy fats, and slow-digesting carbohydrates from oats and honey, helping to keep energy steady between meals. Enjoy one or two with a cup of tea or coffee for a treat that feels indulgent but is built on the same whole-food principles that anchor the Mediterranean diet: nuts, oats, a touch of natural sweetness, and minimal processing.
Ingredients
- 1.5 cuprolled oats
- 0.5 cupvanilla protein powder, whey or plant-based
- 0.5 cupCashew butter, unsweetened
- 3 tbsphoney
- 1.5 tspground cinnamon
- 1 tspvanilla extract
- 2 tbspmilk, or milk of choice, as needed to bind
- 0.25 tspsea salt
- 2 tbspplain Greek yogurt, for icing drizzle
- 2 tbsppowdered sugar, for icing drizzle
- 0.25 tspcinnamon, extra, for dusting
Method
- In a large mixing bowl, combine the rolled oats, vanilla protein powder, ground cinnamon, and sea salt. Stir until evenly mixed.
- Add the cashew butter, honey, and vanilla extract to the dry ingredients. Stir well to combine, pressing the mixture together with a spoon until it starts to clump.
- If the mixture is too dry to hold together, add milk one tablespoon at a time, stirring until the dough is moist enough to form a ball without crumbling.
- Line a baking sheet with parchment paper. Scoop out about a tablespoon of dough and roll between your palms into a smooth ball. Repeat with remaining dough to make about 12 bites, placing them on the lined sheet.
- In a small bowl, whisk together the Greek yogurt and powdered sugar until smooth and pourable, adding a few drops of water if needed to thin the icing.
- Drizzle the icing over the top of each protein bite using a spoon, then dust lightly with the extra cinnamon.
- Refrigerate the bites for at least 30 minutes to firm up before serving. Store in an airtight container in the fridge for up to one week. 30:00
