Branzino Puttanesca with Crispy Breadcrumb Topping
Inspired by the bold, briny flavors of southern Italian puttanesca sauce, this dish transforms tender branzino fillets into a quick, elegant weeknight dinner. The fish bakes directly in a vibrant sauce of burst cherry tomatoes, salty Kalamata olives, piquant capers, garlic, and a touch of chili flake, soaking up all that Mediterranean coastal flavor as it cooks. A final flourish of golden, olive-oil-toasted breadcrumbs adds irresistible crunch against the flaky, delicate fish. This recipe embodies everything the Mediterranean Diet celebrates: fresh fish as the star protein, extra virgin olive oil as the primary fat, plenty of vegetables, and bold herb and spice flavoring instead of excess salt or processed ingredients. It comes together in under 40 minutes, making it perfect for a healthy weeknight dinner that still feels like a special occasion. Serve with a simple green salad or crusty whole-grain bread to soak up the extra sauce.
