- 2 tspchili powder
- 1.5 tspsmoked paprika
- 1.5 tspground cumin
- 0.5 cupvegetable broth
- 3 largeshallots, thinly sliced into rings
- 1 cupNeutral oil, for frying, such as grapeseed or canola
- 0.25 cupfresh cilantro, chopped, for garnish
- 1 wholelime, cut into wedges, for serving
- 2 stalksgreen onions, thinly sliced, for garnish
Method
- Preheat the oven to 425°F (220°C). Scrub the russet potatoes clean and pat dry. Pierce each potato several times with a fork, then rub with 1 tablespoon olive oil and sprinkle with 1 teaspoon of the coarse salt.
- Place the potatoes directly on the oven rack or on a baking sheet and bake until fork-tender and the skin is crisp, about 55-60 minutes. 60:00
- While the potatoes bake, make the cashew sour cream: add the soaked and drained cashews, lemon juice, apple cider vinegar, 1/2 cup water, 1 clove of minced garlic, and 1/4 teaspoon salt to a high-speed blender.
- Blend on high until completely smooth and creamy, adding more water a tablespoon at a time if needed to reach a sour cream-like consistency. Set aside.
- Make the crispy shallots: heat the neutral oil in a small saucepan over medium heat. Once shimmering, add the sliced shallots and fry, stirring occasionally, until golden brown and crispy, 6-8 minutes. 8:00
- Using a slotted spoon, transfer the crispy shallots to a paper towel-lined plate and sprinkle with a pinch of salt. Set aside; they will continue to crisp as they cool.
- Make the chili: heat the remaining 1 tablespoon olive oil in a large saucepan over medium heat. Add the diced onion and red bell pepper, and saute until softened, about 5 minutes. 5:00
- Add the remaining 3 cloves minced garlic and cook until fragrant, about 1 minute. 1:00
- Stir in the black beans, fire-roasted tomatoes, tomato paste, minced chipotle pepper with adobo sauce, chili powder, smoked paprika, cumin, remaining 1/4 teaspoon salt, and vegetable broth.
- Bring the chili to a simmer, then reduce heat to low and let it simmer uncovered, stirring occasionally, until thickened, about 15-20 minutes. Use the back of a spoon to mash some of the beans for a thicker texture. 17:30
- Once the potatoes are done baking, remove from the oven and let cool slightly until safe to handle. Slice each potato lengthwise down the middle and use a fork to fluff the interior flesh.
- To assemble, place each split potato on a plate and generously spoon the smoky black bean chili over the top.
- Drizzle generously with the cashew sour cream, then top with crispy shallots, chopped cilantro, and sliced green onions. Serve immediately with lime wedges on the side.
