Teriyaki Chickpea & Snap Pea Soba Bowl
This Teriyaki Chickpea & Snap Pea Soba Bowl is weeknight comfort food with a plant-powered twist. Buckwheat soba noodles are tossed in a mellow homemade teriyaki glaze built from soy sauce, maple syrup, rice vinegar, garlic, and fresh ginger, then combined with golden, crispy pan-seared chickpeas for a satisfying protein boost. Crunchy snap peas and shredded carrots add freshness, color, and texture, while a scattering of toasted sesame seeds and sliced scallions brings the whole bowl together with a nutty, aromatic finish. Ready in well under 40 minutes, this one-pan-plus-pot dinner is ideal for busy evenings when you want something nourishing but don't want to sacrifice flavor. The chickpeas are seared until crisp-edged before being glazed, giving them a texture reminiscent of crispy tofu but with zero prep fuss since they come straight from the can. This recipe is naturally dairy-free, egg-free, and fully vegan, relying on wholesome soy, legumes, and vegetables for its richness. Feel free to customize the vegetables with whatever crunchy produce you have on hand — thinly sliced bell peppers, shredded cabbage, or edamame would all work beautifully. For a gluten-free version, swap the soba for 100% buckwheat noodles or rice noodles, and use tamari instead of soy sauce. Leftovers keep well in the fridge for up to three days, making this a great make-ahead lunch option too.

Method
- Bring a large pot of water to a boil. Cook the soba noodles according to package directions, about 4-5 minutes, until just tender. 5:00
- Drain the noodles in a colander and rinse under cold water to stop the cooking and remove excess starch. Set aside.
- While the noodles cook, pat the drained chickpeas very dry with paper towels to help them crisp up in the pan.
- In a small bowl, whisk together the soy sauce, maple syrup, rice vinegar, grated ginger, and minced garlic to make the teriyaki sauce base.
- Heat 1 tablespoon of neutral oil in a large skillet over medium-high heat. Add the chickpeas in a single layer and season lightly with salt and pepper. Cook, stirring occasionally, until golden and crispy on several sides, about 6-8 minutes. 8:00
- Push the chickpeas to one side of the skillet, add the remaining tablespoon of oil, and add the snap peas and shredded carrots. Sauté for 2-3 minutes until just tender-crisp. 3:00
- Pour the teriyaki sauce over the chickpeas and vegetables in the skillet. Stir the cornstarch slurry once more and add it in, stirring to combine. Cook for 1-2 minutes until the sauce thickens and glazes everything evenly. 2:00
- Add the cooked soba noodles directly to the skillet along with the toasted sesame oil. Toss everything together using tongs until the noodles are well coated in the glaze.
- Divide the noodle bowl among plates or bowls. Sprinkle generously with toasted sesame seeds and sliced scallions before serving.
