Ground Turkey and Quinoa Stuffed Bell Peppers
These stuffed bell peppers are a satisfying, low-FODMAP friendly dinner that doesn't skimp on flavor. Lean ground turkey is browned with garlic-infused oil (a low-FODMAP swap that delivers garlicky flavor without the fermentable fructans), then combined with fluffy quinoa, juicy diced tomatoes, and tender wilted spinach. The mixture is piled into halved bell peppers and baked until the peppers soften and the tops turn lightly golden, creating a colorful, protein-packed, one-dish meal. This recipe is designed with IBS and sensitive digestion in mind: it skips onion and garlic in favor of the green tops of scallions and garlic-infused oil, uses lactose-free cheese for the topping, and relies on gut-friendly vegetables like bell peppers, tomatoes, and spinach. It's a nourishing, well-balanced dinner suitable for anyone following the elimination phase of the Low-FODMAP Diet, or simply looking for a lighter, gut-friendly twist on a classic comfort food.</long_description> <parameter name="meta_description">Low-FODMAP stuffed bell peppers with ground turkey, quinoa, tomatoes, and spinach—a colorful, protein-packed, gut-friendly dinner.
