Coconut Cream Panna Cotta with Lime Zest
This Coconut Cream Panna Cotta reimagines the classic Italian set custard as a fully ketogenic, dairy-free dessert without sacrificing an ounce of its signature silky texture. Full-fat coconut cream is gently warmed with vanilla and monk fruit sweetener, then set with gelatin until it wobbles perfectly on the spoon. The result is a rich, tropical-tasting treat with virtually no net carbs and no refined sugar, making it an ideal finish to any keto meal. The addition of fresh lime zest cuts through the richness of the coconut cream, adding a fragrant citrus brightness that keeps every bite feeling light rather than heavy. Because the recipe relies on gelatin rather than eggs for its structure, there's no baking required — simply heat, whisk, pour, and chill. It's an elegant, make-ahead dessert that's as suited to a weeknight treat as it is to dinner party service, proving that a strict ketogenic diet can still include silky, indulgent sweets.
