Toasted Nori & Brown Rice Breakfast Bowl with Soft Tofu and Scallion
Inspired by the savory breakfast tables of Tokyo, this bowl swaps sugary cereal for a warm, umami-rich start to the day. Fluffy brown rice is topped with silky cubes of soft tofu, crisp-toasted strips of nori, and a scattering of fresh scallions, all finished with a glossy sesame-soy drizzle that ties everything together. It's comforting, protein-packed, and endlessly customizable with whatever vegetables or pickles you have on hand. This bowl is a wonderful example of how a plant-based breakfast can be deeply satisfying without relying on sweetness. The combination of whole-grain brown rice and tofu delivers fiber and protein to keep you full through the morning, while the toasted nori contributes iodine and a wonderful oceanic crunch. Sesame oil and seeds add healthy fats and a nutty depth that rounds out the dish. Best of all, this recipe comes together quickly if you have leftover cooked rice on hand, making it an ideal weekday breakfast that feels special without requiring much effort. Serve it hot, straight from the stove, for maximum comfort.
