Strawberry Cheesecake Yogurt Parfait
Craving cheesecake but trying to stay on track with your points budget? This Strawberry Cheesecake Yogurt Parfait delivers all the creamy, fruity, graham-cracker-crumble satisfaction of classic cheesecake in a fraction of the time and points. Thick, protein-packed nonfat vanilla Greek yogurt stands in for the traditional cream cheese filling, while a light honey-lime strawberry mixture adds natural sweetness and brightness. A sprinkle of crushed graham crackers on each layer mimics the buttery crust you love. Built entirely without baking, this parfait comes together in under 15 minutes, making it the perfect make-ahead dessert for busy weeknights or a grab-and-go breakfast treat. Layering the ingredients in a clear glass not only looks beautiful but also helps with portion control, a core principle of mindful eating. Each spoonful delivers a balance of protein from the Greek yogurt, fiber and vitamin C from the strawberries, and just enough crunchy sweetness from the graham crackers to satisfy any cheesecake craving. This recipe is endlessly customizable — swap in other berries, use a sugar-free graham cracker option, or add a touch of sugar-free whipped topping for extra indulgence. Because nonfat Greek yogurt and fresh strawberries are low in points, this dessert fits beautifully into a flexible, sustainable eating plan without requiring you to give up the flavors you crave.
