Shiitake-Miso Tofu Katsu with Steamed Rice and Quick Pickles
This vegan take on Japanese katsu swaps breaded meat for firm tofu, pressed and sliced into thick cutlets, then coated in seasoned panko and baked until golden and shatteringly crisp. Instead of deep-frying, a hot oven and a light mist of oil give you that satisfying crunch with a fraction of the oil. The real star is the gravy: earthy shiitake mushrooms simmered down with miso, soy sauce, and a touch of maple create a rich, umami-packed sauce that pools over fluffy short-grain rice and the crunchy cutlets. Alongside, quick-pickled cucumbers bring a bright, vinegary snap that cuts through the richness of the gravy and tofu, rounding out the plate the way a good katsu dinner should. It's comforting, a little nostalgic, and entirely plant-based — great for weeknights when you want something crispy and saucy without any animal products. Nutritionally, this dinner delivers plant protein from the tofu, fiber and B vitamins from the shiitake mushrooms and whole-grain-friendly rice swap options, and probiotic-adjacent umami depth from fermented miso. It's a satisfying, nutrient-dense meal that fits easily into a heart-healthy, cholesterol-free vegan diet.</long_description> <parameter name="meta_description">Crispy baked tofu katsu with umami miso-mushroom gravy, steamed rice, and quick pickles — a comforting, 100% vegan dinner.

- 2 stalkscallions, thinly sliced, for garnish
- 1 tbspToasted sesame seeds, for garnish
Method
- Press the tofu blocks for at least 20 minutes to remove excess moisture, then slice each block into 4 thick cutlets (8 total). 20:00
- While the tofu presses, make the quick pickles: toss the sliced cucumbers with rice vinegar, sugar, and salt in a bowl. Set aside to marinate, stirring occasionally.
- Rinse the short-grain rice, then combine with water in a saucepan. Bring to a boil, cover, reduce heat to low, and simmer until water is absorbed and rice is tender. 20:00
- Preheat the oven to 425°F (220°C) and set a wire rack on a baking sheet.
- Set up a breading station: whisk flour, cornstarch, plant milk, garlic powder, half the salt, and pepper in one shallow bowl until smooth. Place panko in a second shallow bowl.
- Dip each tofu cutlet into the batter, letting excess drip off, then press firmly into the panko to coat all sides. Place on the wire rack.
- Spray or brush the breaded cutlets generously with oil on both sides. Bake until golden and crisp, flipping halfway through. 25:00
- Meanwhile, make the gravy: heat sesame oil in a large skillet over medium heat and sauté the sliced onion until softened. 4:00
- Add the shiitake mushrooms and minced garlic to the skillet and sauté until the mushrooms release their moisture and turn golden. 6:00
- Whisk the miso paste into the vegetable broth until dissolved, then pour into the skillet along with soy sauce and maple syrup. Bring to a gentle simmer. 5:00
- Stir the cornstarch slurry into the simmering gravy and cook until thickened to a saucy, gravy-like consistency. 2:00
- Fluff the steamed rice with a fork and divide among bowls. Slice the crispy tofu cutlets and arrange over the rice.
- Spoon the warm miso-mushroom gravy generously over the tofu and rice. Top with scallions and sesame seeds, and serve with the quick pickles on the side.
