Mellow Miso Soba Noodle Bowl with Crispy Tofu
This Mellow Miso Soba Noodle Bowl is comfort food at its coziest, no fiery chili or sharp spice in sight, just rounded, savory-sweet umami flavor from a simple miso-based sauce. Buckwheat soba noodles (look for a 100% buckwheat variety to keep this dish gluten-free) are tossed with lightly sweetened white miso, rice vinegar, and a touch of sesame oil, then piled high with golden, pan-crisped tofu cubes, tender-crisp steamed broccoli, and a tangle of shredded carrots for color and crunch. It's a weeknight dinner that comes together in under 40 minutes but still feels like a warm hug, perfect for anyone easing into plant-based eating or simply craving something gentle and nourishing. The tofu gets a light cornstarch dusting before hitting the pan, which gives it a satisfying crisp shell while staying soft inside, no deep frying required. Nutritionally, this bowl is a great source of plant protein from the tofu, fiber and complex carbs from the buckwheat soba, and a wide range of vitamins from the broccoli and carrots. Miso adds beneficial probiotics along with its deep savory flavor. Together, this makes for a balanced, satisfying vegan dinner that supports heart health, steady blood sugar, and overall wellbeing, all without any animal products.
