Coconut Panna Cotta with Lime and Mint
This Coconut Panna Cotta with Lime and Mint takes the classic Italian set custard and gives it a tropical, South Beach-friendly makeover. Full-fat coconut milk provides the rich, silky base while a granulated sugar substitute keeps the dessert low-glycemic and suitable for Phase 2 and beyond. Fresh lime zest and a touch of vanilla brighten the coconut flavor, and a light dusting of gelatin gives the panna cotta its signature soft, barely-set wobble without needing eggs or cream. Unlike traditional panna cotta recipes loaded with heavy cream and sugar, this version leans on healthy fats from coconut milk and skips refined sugar entirely, making it an elegant way to satisfy a sweet tooth while staying aligned with South Beach Diet principles. It's naturally portioned into individual glasses or ramekins, which makes portion control effortless and presentation beautiful for entertaining. Serve these chilled, topped with a few fresh mint leaves and extra lime zest for a refreshing, palate-cleansing dessert that feels indulgent but keeps carbs and added sugars in check. It's a make-ahead dessert, perfect for dinner parties or a light nightly treat that won't derail your blood sugar goals.
