Sesame-Miso Tofu & Tempeh Chazuke
Chazuke, the beloved Japanese comfort food of broth poured over rice, gets a plant-based upgrade in this cozy vegan dinner bowl. Steamed brown rice is topped with golden, pan-seared tempeh and pillowy cubes of silky tofu, then bathed in a savory miso-kombu broth deepened with a touch of toasted sesame oil. It's the kind of meal that feels like a warm hug after a long day, yet comes together in about thirty minutes with mostly pantry staples. Tempeh brings a nutty, satisfying chew and a boost of plant protein, while the soft tofu melts slightly into the hot broth, creating little pockets of silkiness in every spoonful. The kombu-dashi base, enriched with white miso, delivers deep umami without any fish or animal products, making this a naturally vegan take on a classic Japanese preparation. A scattering of scallions and toasted sesame seeds on top adds brightness, crunch, and nutty aroma. This dish is wonderfully adaptable: swap in leftover rice to save time, add a handful of baby spinach or mushrooms to the broth for extra nutrients, or finish with a drizzle of chili oil for heat. It's light enough for a weeknight yet nourishing enough to feel like a complete, balanced meal, delivering protein, fiber, and warming broth all in one bowl.
Ingredients
- 2 cupsCooked brown rice, warm, freshly steamed or reheated
- 200 gTempeh, sliced into thin strips
- 200 gfirm silken tofu, cut into 1-inch cubes
- 1 pieceKombu, about 4-inch square, for dashi
- 3 cupswater, divided, for dashi and broth
- 3 tbspWhite miso paste
- 1 tbspsoy sauce
- 1 tbsptoasted sesame oil, divided
- 1 tbspNeutral oil, for searing, such as avocado or vegetable oil
- 2 stalksscallions, thinly sliced
- 1 tbspToasted sesame seeds
- 1 tsprice vinegar, optional, for brightness
Method
- Place the kombu and 3 cups water in the medium saucepan. Let it soak for 10 minutes while you prep the other ingredients, then set over medium heat and bring just to a gentle simmer; remove the kombu right before it boils to avoid bitterness. 10:00
- While the kombu steeps, heat the neutral oil in the non-stick skillet over medium-high heat. Add the tempeh strips and sear for 3-4 minutes per side until golden brown and slightly crisp.
- Remove the seared tempeh from the skillet and set aside; drizzle with half the toasted sesame oil while warm.
- Ladle a small amount of the hot kombu broth into a bowl and whisk in the white miso paste until fully dissolved, then stir this mixture back into the saucepan along with the soy sauce.
- Gently warm the broth over low heat for 2-3 minutes, being careful not to let it boil hard, which can dull the miso's flavor. 3:00
- Gently slide the silken tofu cubes into the warm broth and let them heat through for 1-2 minutes without stirring vigorously, to keep them intact. 2:00
- Divide the warm brown rice between two serving bowls, then arrange the seared tempeh on top of the rice.
- Ladle the hot miso broth and tofu cubes generously over the rice and tempeh in each bowl, letting the broth soak into the rice slightly.
- Finish each bowl with a drizzle of the remaining sesame oil, a splash of rice vinegar if using, sliced scallions, and a sprinkle of toasted sesame seeds. Serve immediately while hot.
