Coconut Panna Cotta with Passion Fruit
This Coconut Panna Cotta with Passion Fruit takes the classic Italian dessert and gives it a naturally dairy-free, gluten-free tropical makeover. Rich, full-fat coconut milk is gently warmed with sugar and vanilla, then set with just enough gelatin to create a tremble-when-you-tap-it texture that's silky rather than stiff. The result is a creamy, luscious custard that melts on the tongue, free from any dairy or gluten-based thickeners. Spooned over the cool, set panna cotta is a vibrant passion fruit sauce, its tart-sweet tropical punch cutting beautifully through the richness of the coconut. A final scatter of toasted coconut flakes adds crunch and a toasty aroma that ties the whole dessert together. It's an elegant make-ahead dessert perfect for dinner parties, holiday menus, or anytime you want a show-stopping finish that happens to be completely gluten-free and dairy-free. Because everything is prepared in advance and chilled until ready to serve, this dessert is wonderfully low-stress for entertaining. Simply portion the panna cotta into glasses or ramekins, refrigerate, and top with the sauce and coconut flakes just before serving for a restaurant-quality presentation at home.
Ingredients
- 2 can (13.5 oz each)full-fat coconut milk, well shaken
- 0.5 cupgranulated sugar
- 2.25 tspUnflavored gelatin powder, one standard packet; use agar-agar for vegan version
- 3 tbspcold water, for blooming gelatin
- 1 tspvanilla extract, pure, gluten-free
- 0.125 tspsalt
- 1 cupFresh passion fruit pulp, about 6-8 passion fruits, seeds included
- 3 tbspgranulated sugar, for passion fruit sauce
- 2 tbspwater, for passion fruit sauce
- 0.25 cupunsweetened coconut flakes, for toasting and garnish
Method
- In a small bowl, sprinkle the gelatin powder over the cold water and let it bloom for 5-10 minutes until it forms a thick, spongy gel. 5:00
- In a medium saucepan, combine the coconut milk, sugar, and salt. Warm over medium heat, whisking occasionally, until the sugar dissolves and the mixture is hot but not boiling.
- Remove the saucepan from heat and whisk in the bloomed gelatin until fully dissolved and smooth. Stir in the vanilla extract.
- Divide the coconut mixture evenly among serving glasses or ramekins. Let cool at room temperature for about 15 minutes. 15:00
- Cover the glasses and refrigerate until fully set, at least 4 hours or overnight. 240:00
- While the panna cotta chills, make the passion fruit sauce: combine the passion fruit pulp, sugar, and water in a small saucepan and bring to a gentle simmer over medium heat, stirring until sugar dissolves. 3:00
- Simmer the sauce for 2-3 minutes until slightly thickened, then remove from heat and let cool. For a smoother sauce, strain half the seeds out using a fine mesh sieve, leaving some seeds for texture. 3:00
- Toast the coconut flakes in a small dry skillet over medium-low heat, stirring frequently, until golden and fragrant, about 2-3 minutes. Remove from heat immediately and set aside to cool. 3:00
- Just before serving, spoon the cooled passion fruit sauce over the set panna cotta and sprinkle generously with toasted coconut flakes.
