Grain-Free Smoked Paprika Egg Muffins with Shrimp and Chives
These smoky, savory egg muffins are a low-FODMAP breakfast lifesaver for busy mornings. Whisked eggs are studded with juicy chopped shrimp, smoky paprika, and bright fresh chives, then baked in a muffin tin until puffed and golden. The result is a portable, protein-packed bite that's completely grain-free and gentle on sensitive digestive systems. Unlike traditional egg muffins that rely on onion, garlic, or dairy milk for flavor and moisture, this recipe uses lactose-free milk, chives, and smoked paprika to build savory depth without triggering common IBS symptoms. Shrimp adds lean protein and a satisfying bite, while a touch of shredded hard cheese (optional) gives richness without excess lactose. Make a batch on Sunday and you'll have a grab-and-go breakfast for the whole week. They reheat beautifully in the microwave or toaster oven, and freeze well too, making this an excellent staple for anyone following a low-FODMAP elimination phase who still wants convenient, flavorful mornings.

- 0.5 tspsalt
- 0.25 tspblack pepper
- 1 tbspOlive oil or oil spray, for greasing the muffin tin
Method
- Preheat the oven to 190°C (375°F). Grease a 12-cup muffin tin generously with olive oil or oil spray, including the top rim, to prevent sticking.
- On a cutting board, chop the raw shrimp into small bite-sized pieces. Finely chop the chives and dice the red bell pepper and spinach.
- In a large mixing bowl, crack the eggs and add the lactose-free milk, salt, and black pepper. Whisk until fully combined and slightly frothy.
- Stir the chopped shrimp, smoked paprika, chives, shredded cheese, spinach, and diced bell pepper into the egg mixture until evenly distributed.
- Ladle or pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full, making sure the shrimp and vegetables are distributed evenly among the cups.
- Bake in the preheated oven until the muffins are puffed, set in the center, and lightly golden on top. 20:00
- Remove from the oven and let the muffins cool in the tin for 5 minutes before running a knife around the edges and gently lifting them out. Serve warm or let cool completely and store for grab-and-go breakfasts. 5:00
